Hyde House Rolls




The Stuff:
½ cup butter
1 cup milk
¾ cup sugar
2 tsp yeast
1 cup warm water
3 eggs
6 cups flour
1 tsp salt

Okay, so I am about to share with you my secret roll recipe. are you ready?...this recipe will give you light fluffy yummy scrumptious rolls. OKAY THEY ARE SO YUMMY, and Buttery and delicious. Here's how you do it:

1.Put the cup of warm water in a bowl and pour the yeast in. Sprinkle with a little sugar (from the ¾ cup). Blend the eggs with the remaining sugar until creamy. 
2.Then microwave the butter and milk for 3 minutes then slowly add it to the egg mixture and blend together. Now add the yeast (it should be bubbled up)  and mix it all together together. I throw the salt in at this point and just stir it in. 
3.Then I start to add flour 2 cups at a time. I don’t have a kitchen aid, so I blend it with my hand mixer until I can’t anymore-(dough gets thick and wants to come up and make a big sticky mess) and then I use a spoon. 

To finish mixing it, I dump it all out onto my counter (which I grease and flour) and start kneading.

Knead the dough a couple times on the counter and then place in a greased bowl. 
Let it raise for at least a couple days and then transfer it to a plastic baggy and dip it in gravy. Just kidding. I let it do it's thang for 1 hour at the most and then I can't take it anymore and I have to touch it.
SO... take half of the wad of dough and roll it out like a pizza and cut it into pizza slices. 

Next: I roll them up like a crescent, place them on a greased pan and let them raise for another hour or so. Repeat this with the remaining dough until all the dough is used. 

Preheat oven to 350 and let them cook for 8-10 minutes. I like to take them out at 8 and rub butter all over them and then I put them back in just for a minute. It makes them all bubbly and delicious. They should be golden brown on top when they are done.

Mashed Potatoes


Mashed Potatoes:
5 lb bag of potatoes
Salt
Pepper
Lawry's
Milk-just enough to make it creamy, but not soggy
Garli-boil the potatoes with it
1 package Cream Cheese
1/2 cup Butter

This is a really simple recipe. I eat it everyday because it is so simple and I am from Idaho. So for this recipe you have to use Idaho potatoes or it won't turn out. trust me. I have tried. Actually I haven't and I am sure they will turn out with whatever starchy ball of starch you choose. Just peel and slice the potatoes and toss them in a pot of boiling water (with a little bit of garlic) until they are soft enough for a fork to go through them. Drain the tatoes and then combine butter, cream cheese, milk, and seasonings. Mash them all together and taste until the flavor is good for you. Add more salt if necessary. Then I take out my hand blender and whip the potatoes until smooth and fluffy. That's it folks. That's dinner.
I like to serve them with chicken (pictured) or steak and a veggie and You gotta make gravy. I'll show you how later.

Homemade Country Chicken Fingers

I have tried a few chicken finger recipes and they have all been dismal failures!  Finally i came across this one and tweaked a few things and we love it!

You will need...
  • 4 boneless skinless chicken breasts cut into strips, or just buy some Pre cut chicken strips
  • 1 Cup flour
  • 2 1/2 tsp Salt 
  • 1 tsp Parsley 
  • 1/2 tsp Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp chili Powder
  • 1/2 tsp Paprika 
  • 1/2 tsp Oregano 
  • 1/2 cup milk
  • 1 egg
  • Oil for frying
  1. In medium size bowl mix dry ingredients
  2. In a small bowl mix milk and egg
  3. Dip the chicken strip in milk and egg mixture, then coat with dry mixture.  For extra crispy repeat this process then set aside on separate plate.  
  4. Put enough oil in pan that it will come up about half way on the chicken strips, start heating on medium setting.  Before you start cooking all the strips it's a good idea to test a small piece.  You don't want to cook the strips to fast or they won't cook all the way through.  Fry strips until they turn a light golden brown then remove onto a plate with some paper towels to soak up excess oil.
  5. Let cool and Serve!  


We also used this same recipe to make Onion Rings and they were awesome!  I just sliced a yellow onion into rings and did the exact same process as with the chicken fingers and they turned out so good! We can't wait to make this again!

BBQ Chicken Pizza

This is one of Jason and I's favorite meals of all time!  We usually can devour the entire pizza in one sitting!    The best thing is you can pretty much put whatever you want on it, and cater it to your specific likes and dislikes by choosing what you want on your side, and what your husband or whoever else wants on theirs.

What you will need...

  • Pillsbury pizza dough (if you have your own pizza doug recipe thats awesome!  or you can use Stephanie's once she puts it on, but if you don't have time then the pillsbury pizza dough is awesome!  regular or thin crust crust)
  • BBQ sauce (I really like sweet baby rays)
  • Sliced Provolone Cheese
  • 1-2 cooked and shredded chicken breast
  • Pineapple tidbits 
  • Red Onion (sliced or chopped, i prefer thin slices)
  • Green Pepper (same as the red onion)
  • Shredded American Cheese (just enough to sprinkle over the top)
1st - If you haven't already cooked the chicken and shredded it do that...If you have then you should spread out your pizza dough and smother it in BBQ sauce to your hearts content!  But not to much or it will make the dough soggy especially in the middle!  
2nd - Spread the provolone cheese over your pizza
3rd - Spread the shredded chicken, onion, pepper, pineapple, and whatever else you chose over the pizza. Also sprinkle some Shredded American cheese on top.
4th - Bake according to pizza dough instructions
5th - Enjoy!!!


Notice the peppers are only on my half because Jason doesn't like them!
